O'OLONG TEA

Oolong tea is a semi-oxidized tea, positioned between green tea and black tea. Its key processing step is known as “yaoqing” (tossing and resting the leaves). Through repeated shaking and resting, the edges of the leaves are allowed to oxidize, creating the distinctive appearance often described as “green leaves with red edges.”

Oolong is known for its rich and expressive aroma. Depending on the style, it can show floral, fruity, or mineral notes. After brewing, the liquor is golden to amber in color. The taste is smooth and full-bodied, with a lasting sweetness and a clear sense of layers that unfold over multiple infusions.

Oolong is highly durable and can be steeped many times. It is especially suited for brewing in a gaiwan, allowing the drinker to slow down and appreciate both the fragrance and the depth of the tea. It is a good choice for those who enjoy complexity and a more structured flavor profile.
